Bean Soups

- 1 pound dried great Northern beans, rinsed and soaked overnight
- 1/2 pound cooked ham, chopped
- 1/2 cup brown sugar
- 1 small onion
- 1 clove garlic
- chopped parsley
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- water to cover

Slow Cooker Ham and Bean Soup
- Drain and rinse the soaked beans.
- Combine the beans, ham, brown sugar, onion, garlic, black pepper, and cayenne pepper in a slow cooker.
- Pour enough water into the slow cooker to cover the mixture by about 2 inches.
- Set slow cooker to low
- Simmer 6-12 hours, stirring occasionally.

- 20 ounces assorted dried beans, rinsed and soaked overnight
- 1 large ham bone, ham hocks or sliced ham
- 1 large onion, chopped
- 15 ounce can diced tomatoes
- 1 teaspoon chili powder
- Juice of a lemon
- 1-2 cloves garlic, minced

15-Bean Soup
- Drain and rinse the soaked beans.
- Put the beans in a large pot or Dutch oven.
- Cover with two quarts of water
- Add the ham.
- Add the onion.
- Bring to a boil, reduce heat and let simmer for 2 1/2 hours.
- Add the tomatoes, garlic, chili powder and lemon juice and let simmer for another 30-60 minutes until all the beans are tender.

Serves 8
- 16 ounces dried pinto beans, rinsed and soaked overnight
- 3 cans diced tomatoes
- 2 large bell peppers, seeded and chopped
- 2 tablespoons vegetable oil
- 4 large onions
- 3 cloves garlic
- 1/4 cup chopped parsley
- 3 pounds lean ground beef
- 1/4 cup chili powder
- 4-5 teaspoons salt, or to taste
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin

Chili Beans
- Rinse and drain the soaked beans.
- Place in a large Dutch oven or pot and add water to cover.
- Bring to a boil; reduce heat, cover and simmer until beans are tender, about 2 hours. Bean skins should burst when you blow on a few in a spoon.
- Add tomatoes and simmer for five minutes. Set beans aside.
- In a skillet in 2 tablespoons of vegetable oil, saute chopped onions and bell pepper until soft.
- Add garlic and chopped parsley.
- Add ground beef and brown lightly.
- Stir in chili powder, and cook for 10 minutes. Skim off excess fat/
- Add beef mixture to beans and stir in pepper, cumin and salt to taste.
- Cover and simmer for 1 hour.
